A Better Lunchbox – Week 18, January 3-6 2011

First week back after winter break! It was a busy week at home catching up on things and frustrating back and for the with our Toyota service department to replace a blown tire, which ate up way too much time. Sofie’s lunches were a little simpler this week. I have to get back in gear for next week!

Monday

(I have to say, I’m really pleased with this photo!)

  • Cheese and spinach quesadilla – organic spinach chopped finely with organic Mexican blend cheese melted in an organic flour tortilla
  • Broccoli – organic, steamed the night before
  • Clementine Mandarin Orange – organic and local from our Frog Hollow Farm CSA
  •  

    Consumption: She only left a few bites of quesadilla and about half the broccoli.


    Tuesday

  • Whole grain bread – organic, cut into space themed shapes
  • Chicken pieces – Whole Foods rotisserie chicken cut into finger food pieces (no skin)
  • Cheese – organic Colby cheese
  • Carrots – organic, raw, cut into small sticks
  • Apple – organic and local from our Frog Hollow Farm CSA (forgot to include in the picture! It was sliced and put in another container)
  •  

    Consumption: She at everything except for a little bit of bread, 4 apple slices and most of the carrots.


    Wednesday

  • Pork chop – organic, seasoned with garlic salt and pan seared
  • Rice balls – organic sushi rice molded with Japanese rice molds and decorated with nori cut outs
  • Broccoli – organic, steamed the night before
  • Clementine Mandarin Orange – organic and local from our Frog Hollow Farm CSA
  •  

    Consumption: She left a few carrots and one piece of pear.


    Thursday

    Sorry no photo again. I’m turning into such a slacker. It was a funny week as I have to go back and forth to the Toyota dealer to get a flat tire replaced on our Prius, which ate up a lot of time to shop and to cook, or even really think about Sofie’s lunches. So…she got take out, which really, every now and then is just fine.

  • Cheese pizza – order the night before from Amici’s, retoasted in the morning in the oven on a pizza stone
  • Apple – organic and local from our Frog Hollow Farm CSA
  •  

    Consumption: left pizza crusts (as usual) and a few apple slices.

      WOW !!! these are fabulous Jeannie…..I am no expert of dietary need but from first look they look extremely balanced. I also notice from your consumption comments that she actually eats some of everything.

      Children, as you know often go for their favourites and leave the rest. (I think this is a BIG problem in schools today)(slowly being rectified)….in Sofie’s case, I think that not only is the food beautifully presented, you and J have expanded her taste for different things, such that she WILL eat and you can offer so many options.

      Unfortunately, parents today, well some anyways, take easy ways out in lunch prep. either that or the kids get money to buy lunch without followup to see what they actually ate.

      I still believe you may be on to something. Thanks for sharing.
