A Better Lunchbox – Week 19, January 10 – 13 2011
Chicken fingers – homemade with organic chicken breast, dipped in organic milk then coated in seasoned brown rice flour and pan fried in olive oil
Whole grain bread – organic, cut into butterfly shapes
Carrots – organic, cut into sticks and cooked slightly to soften
Apple – organic and local from our Frog Hollow Farm CSA
Consumption: She ate all but two bites of chicken fingers, ate most of the apple and only a little bread and carrot.
Big day – Sofie’s first real sandwich at school! She normally doesn’t eat sandwiches, she doesn’t seem to like them. But the week before she asked for a sandwich for breakfast so I made her one and she actually ate most of it. I thought I try the same sandwich in her lunch box to see if she’d eat it! I included an extra photo here so you can see how I packed up all the elements in this lunch.
Sandwich – Organic whole grain bread, with cream cheese and Happy Girl low sugar Strawberry Jam
Edamame – Organic, frozen, cooked that morning and slightly salted
Clementine Orange – organic and local from our Frog Hollow Farm CSA
Consumption: She ate most of the sandwich, one of the 2 oranges and a few edamame.
Chicken/spinach/rice – prepared my usual way: seasoned organic ground chicken (thigh) sautéed with shallots and garlic, then lots of finely chopped organic baby spinach added, cooked for another couple minutes and combined with organic sushi rice
Pear – organic and local from our Frog Hollow Farm CSA
Consumption: She ate most of the rice but only a couple pieces of pear.
Ham and cheese rolls – ham wrapped around pieces of organic colby cheese, held together with animal picks
Whole wheat mini-bagel – organic
Peas – organic, frozen, cooked for a couple minutes
Clementine Mandarin Orange – organic and local from our Frog Hollow Farm CSA
Consumption: She ate half of the bagel and all of the orange. She only took one bite of the ham and cheese. She tends to not love it when things are combined, if I had kept the ham and cheese separate, she probably would have eaten at least the cheese. I thought the cuteness would win over, but I was wrong. She did at least take one bite.
